  1. For Echor Biryani Masala
  2. 500 gms Echor
  3. 1/2 cup yogurt
  4. 1 tsp red chilli powder
  5. 3-4 green chilli slit
  6. 1 inch ” ginger chopped fine
  7. 1 large onion sliced fine
  8. 1/2 tsp caraway seeds
  9. Sprigs mint leaves
  10. Sprigs coriander leaves
  11. as per taste Salt
  12. 2 Tbsp ghee plus
  13. 2 Tbsp oil
  14. For Biryani Rice
  15. 2 cups Basmati rice
  16. 1 bay leaf
  17. 3-4 cloves
  18. 1 inch cinnamon stick
  19. 3-4 green cardamoms
  20. as per taste salt
  21. 4 cups water
  22. For Biryani Layering
  23. 1 large onion fried
  24. 4 Tbsp ghee
  25. Sprigs mint leaves
  26. Sprigs coriander leaves
  27. 2 Tbsp milk in few strands of saffron
  28. 1 Tbsp Cashew nuts
  29. 1 Tbsp raisins

Steps to make to make Echor Biryani

  1. For Biryani Rice - Soak Basmati Rice for 30 mins at least. Drain and add to a heavy bottomed bowl. Add 4 cups water and lot of salt, bay leaf, cloves, cardamom, cinnamon stick and bring it to boil. The rice should be 80% done. Strain and set aside
  2. For Echor Biryani Masala - Wash the Echor and grease your palms to peel the skin and cut into 1-2” size.
  3. In a pan heat 1 Tbsp oil and fry the Echor before making the Biryani masala. Fry for 3-5 mins. Set aside
  4. In a pan heat ghee and oil together, add caraway seeds, add sliced onions, chopped ginger. Fry till translucent, and rawness of the ginger leaves, add slit green chilies and fried Echor. Stir for 2-3 mins.
  5. Add whisked Yogurt, red chilli powder, stir and cover for 10 mins to let the Echor cook. Add salt, few mint leaves and coriander leaves. Cover and let it cook for 1-2 mins. Incase you feel water needs to be added if the mix is fry then add 1/4 cup water. Set aside once done
  6. For Assembling - In a heavy bottomed pan smear with ghee well, add one layer of Echor Masala, add rice but don’t press hard as Basmati rice is very delicate. Sprinkle fried onions, few mint leaves, few coriander leaves. Make another layer with Echor Masala, Rice, fried onions, few mint leaves, few coriander leaves, last layer of rice only. Add fried onions, cashew nuts and raisins and milk with saffron in it on top.
  7. Have a Tawa on high heat, place the heavy bottomed vessel on it, cover tight and on low flame cook on Dum for 15 mins. After 15 mins switch off the flame but keep covered for further 10 mins
  8. To plate take a ladle and lift from the bottom gently the rice and Echor and don’t mix everything together otherwise it will turn like a khichuri. Plate with mint leaves, coriander leaves, cashew nuts, raisins and enjoy wifi a Burhani or Raita or on it own
