- Wash the rice and pressure cook with 1cup of water for 3 whistles
- Bring the rice to room temperature.
- Heat oil in a pan.
- Once the oil is hot, add mustard seeds, urad dal, and chanadal and let them crackle for a few seconds.
- Add cashews, peanuts, green chilli, curry leaves and asafoetida. Fry until cashews and peanuts turn a little brown.
- Pour 1/4 to 1/2 cup water and add salt.
- Add the rice and curd. Cook it in a low flame for 5 mins.
- Add water or curd if required.
- Switch off the flame and add finely chopped onion and coriander leaves.
- Serve the curd rice with potato fry and pickle.
