- 2 cups basmati rice π
- 4 tbsp oil
- 2 mace
- 2 star anise
- 2 cinnamon sticks
- 1/2 tsp black peppercorns
- 2-3 finely chopped green chillies
- 1 tsp cumin seeds
- 1 tsp coriander & cumin powder
- 4 cups water
- For garlic salsa :
- 6-7 whole garlic cloves π§
- 2 small size onions rings π§
- 1 tbsp fresh dill finely chopped
- 1/4 tsp black pepper powder
- 1 tbsp white vinegar
- Salt to taste π§
- For garnish : finely chopped parsley, fried onions π§

- In a bowl add chicken pieces π, slit green chillies, yogurt, salt π§, cinnamon sticks, bay leaves, cloves, ginger- garlic paste π§,green chillies paste, small cardamom, mace, fennel powder, lemon juice π, garam masala powder/ biryani masala and mix well, cover and keep for 30 mins in refrigerator.

- Wash and clean rice for 2- 3 times, soak for 30 mins, heat oil, add mace, star anise, cinnamon sticks,black pepper corns, cumin seeds, cook for 1 sec, add sliced onions π§ cook until golden brown, add above marinade chicken and mix well, cook on medium flame, cover and cook for 5 mins.
- Add cream, salt π§, coriander & cumin powder, 1 tbsp finely chopped coriander leaves πΏ mix well, add 4 cups of water mix well, let it boil, add soaked rice π, cook on medium to high flame, until 3/4 rice is cook, add remaining finely chopped coriander leaves πΏ, mint leaves, 2-3 finely chopped green chillies, ghee on top cover and cook for 2 mins.
- Finally add saffron milk, fried onions π§ , rose water πΉ, kewra water, cover and cook on low - medium for 5 mins, serve hot, garnish with finely chopped parsley, fried onions π§ if desired.
- For garlic salsa: in a small bowl add whole garlic cloves π§, ringed onions π§ , fresh dill finely chopped, black pepper powder, salt π§, white vinegar mix well and serve with muradabadi chicken biryani.
